Bonito

Perched above Gustavia harbour with panoramic views across the yachts and waterfront, Bonito is the fine-dining restaurant that most first-time visitors discover and the one that veterans keep returning to. The setting is spectacular: an open-air terrace with gauze curtains, candlelight, and a view that somehow manages to be glamorous without trying too hard.

The kitchen runs a French-Latin American menu that sounds unlikely on paper but works beautifully in practice. The ceviche is outstanding (pristine fish, bright citrus, the right amount of heat) and it's become the signature dish. Mains lean toward grilled proteins handled with French precision: côte de boeuf for two, a generous lobster tail, or line-caught mahi-mahi with plantain purée and sauce vierge.

The wine list is predominantly French with smart selections from South America. Expect 80-120 EUR per person for dinner with wine. Time your reservation for sunset. The harbour transforms as the light drops.

Bonito strikes the perfect balance between excellent food, relaxed atmosphere, and an environment that makes you want to stay for hours. Perched above Gustavia harbor with views across the water and into the hills, it draws a sophisticated crowd that knows St. Barts but does not need to perform for anyone. The menu runs a French-Asian fusion line that could easily feel contrived but here it is executed with real confidence. The tuna dishes are outstanding — clean, fresh fish handled with technique and restraint. The cocktail program is creative without being precious. You can show up in a linen shirt and sandals and still have one of the best meals of your trip. The service is relaxed but attentive — they check in without hovering and they know the menu inside and out. Gustavia has several excellent restaurants competing for your attention and Bonito earns it every night. The price point is fair for St. Barts which is genuinely saying something. I have recommended this place to every friend visiting the island and every single one has come back and thanked me. That is the best review I can give.

One of the most beautiful restaurants in St Barth with unbeatable views. The wine list is impeccable as are the very inventive and instagram friendly cocktails. This spot never disappoints. It was the 2nd night this week that our family visited Bonito on our 7day trip to St Barts for Thanksgiving week. Bonito was Undoubtably the highlight of our restaurant bookings - we tried all the top places in St Barts . From the Moment Marie greeted us at Reception to the table service, the exceptional menu and food and the excellent Sommeliers (lead by Nico P) we had 2 wonderful evenings @ Bonito this week - confirming that Bonito’s owners have assembled a world class team. The menu and Food is amazing - seafood is their speciality - the new Peruvian chef is clearly a seafood expert, securing daily local catches - they make the most wonderful daily fresh Ceviche (which they are famous for) - for New Yorkers think Milo’s NYC quality x2 with a better and deeper wine list. The wine list is exceptional - Nico guided me thru amazing French champagne (Jacques Selosse) ; Chardonnay (Batard-Montrachet Grand Cru and Meursault Olivier Lefaive ) and Red Burgundy (La Richmone - Vignes Centenaries - Perrot-Minot), concluding with an amazing Cevrey-Chambertin (Vieille Vigne) - we sharing stories with Nico of his annual visits to Beaune, Burgundy, dining at Le Cellier Volnaysien and the Grand Cru vineyards he visits annually for tastings in preparing the next season’s wine list. I was fortunate to visit the Bonito cellar for a tasting and witness first hand the amazing collection Bonito and their Somme’s have established. Bonito is a truly special beacon on an island of 1st class food and service - with the most spectacular view of Gustavia harbor - a must visit for the discerning food and wine lover - I look forward to visiting again soon 5/5 and 10/10.
