Merah Putih is the most architecturally striking restaurant in Bali, and possibly in all of Indonesia. The name means "red and white," the colours of the Indonesian flag, and the cathedral-like space, designed by the architects behind Potato Head, sends soaring bamboo columns up to a vast peaked ceiling. The scale of the room alone is worth the visit.

The cooking holds its own against the setting. The menu is modern Indonesian, drawing from across the archipelago and reworking traditional dishes with contemporary technique. The nasi goreng, cooked at a dedicated wok station, arrives intensely smoky and rich; the rawon, a Javanese black nut soup with braised beef, is dark and complex; and the satay, grilled over coconut husks, is among the best on the island.

Dinner for two with drinks runs around USD 60 to USD 90. The cocktail programme is strong, particularly the Indonesian-inflected creations using arak, tamarind, and pandan. Sunday brunch is popular with residents and tends to book out, so reserve several days ahead.
